Step-by-Step Instructions
1. Roast the Potatoes
- Preheat oven to 400°F (200°C).
- Pierce potatoes with a fork, rub with olive oil, salt, pepper, garlic powder, and paprika.
- Bake directly on the rack for 50-60 minutes until crispy outside and tender inside.
- Let cool slightly, then slice open and fluff the insides with a fork.
2. Cook the Taco Beef
- In a skillet, brown the ground beef over medium heat. Drain excess fat.
- Add taco seasoning and water, simmer for 5 minutes until thickened.
3. Assemble & Melt
- Place potatoes on a baking sheet.
- Stuff each with taco beef and top with shredded cheese.
- Broil for 2-3 minutes until cheese is bubbly.
4. Add Toppings & Serve
- Drizzle with sour cream and salsa.
- Top with avocado, cilantro, red onion, and jalapeño.
- Serve with lime wedges for squeezing.
